Oats Peanut Salad

INGREDIENTS

  • Bagrry’s Oats for Rice - 1 cup
  • Cucumber - ½ cup, diced
  • Carrots - ½ cup, chopped
  • Peanuts - ½ cup, roasted and chopped
  • Broccoli - ½, steamed
  • Olive oil - 3 tbsp (Optional)
  • Lemon juice - 2 tbsp
  • Pepper - (to taste)
  • Water - 2 cup

PREPARATION

  • In a vessel with a tight-fitting lid, add Bagrry’s Oats for Rice and water
  • Bring to a boil over medium heat
  • Stir once, then cover with lid and reduce the heat to a simmer
  • Cook for 20 minutes. Remove from heat and let it stand in the covered pot for 10 minutes
  •  Mix in olive oil, lemon juice and pepper to taste. Let the mixture cool completely
  • Once cold, add cucumber, carrot, broccoli, peanuts and combine well
  • Enjoy your high fibre chewy salad
