OFI Suji Semolina Bites

INGREDIENTS

  • Bagrry’s Oats for Suji - 1 ½ cups
  • Oil - 3 tbsp
  • Green chillies - 2, chopped
  • Garlic - ½ tsp, chopped
  • Red capsicum - ½ cup, finely chopped
  • Milk - 1½ cups
  • Oregano flakes - ½ tsp
  • Red chilli flakes - ½ tsp
  • Salt - ½ tsp
  • Black pepper - ¼ tsp, crushed
  • Coriander - 2 tbsp, chopped
  • Lemon juice - 1 tsp
  • Corn - ¼ cup

PREPARATION

  • Heat oil in a pan. Add red chilli flakes and garlic. Add red capsicum, coriander and corn
  • Add milk and stir to combine
  • Sprinkle Bagrrys Oats for Suji gradually, stirring till it mixes properly and thickens. Add salt, red chilli flakes, oregano and pepper. Add lemon juice. The mixture will eventually turn doughy
  • Transfer to a greased flat surface and shape into a ½" thick block
  • Let it set for 15 mins. Neaten the edges and cut into 1" squares
  • Dip the squares in a thin flour batter and roll over seasoned bread crumbs
  • Cover with a cling foil and keep in the fridge till you're ready to serve
  • To serve, deep fry till golden. Alternately, bake in a pre-heated oven at 200°C for 20 mins or till golden
