Quinoa and Sweet Potato Patties

Ingredients

  • 1 cup Bagrry's Quinoa
  • 2 cups water
  • 1 large sweet potato, cooked and mashed
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh Coriander leaves
  • 1/4 cup finely chopped onion
  • 1 egg, beaten
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil for frying

Recipe

  • Rinse the Bagrry’s Quinoa under cold water.
  • In a saucepan, bring the water to a boil. Add the quinoa, reduce to a simmer, cover, and cook for 15 minutes or until water is absorbed. Let it cool.
  • In a large bowl, combine the cooked quinoa, mashed sweet potato, breadcrumbs, coriander leaves, onion, egg, cumin, salt, and pepper.
  • Form the mixture into patties.
  • Heat olive oil in a skillet over medium heat. Cook the patties for 3-4 minutes on each side, until golden brown.
  • Serve with a dollop of yoghurt or a side salad.
