Quinoa and Sweet Potato Patties

Ingredients
- 1 cup Bagrry's Quinoa
- 2 cups water
- 1 large sweet potato, cooked and mashed
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh Coriander leaves
- 1/4 cup finely chopped onion
- 1 egg, beaten
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil for frying
Recipe
- Rinse the Bagrry’s Quinoa under cold water.
- In a saucepan, bring the water to a boil. Add the quinoa, reduce to a simmer, cover, and cook for 15 minutes or until water is absorbed. Let it cool.
- In a large bowl, combine the cooked quinoa, mashed sweet potato, breadcrumbs, coriander leaves, onion, egg, cumin, salt, and pepper.
- Form the mixture into patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for 3-4 minutes on each side, until golden brown.
- Serve with a dollop of yoghurt or a side salad.
