Oat Bran Cookies and Bars
30-35 minutes
Makes about 12-15 cookies or bars
Ingredients
- 1 cup Bagrry’s oat bran
- 1 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips or chopped nuts (optional)
Recipe
- Preheat your oven to 350°F (175°C). Grease a baking tray or line it with parchment paper.
- In a mixing bowl, whisk together Bagrry’s oat bran, whole wheat flour, baking soda, and salt until well combined. Set aside.
- In a separate bowl, cream together the softened butter, brown sugar, and honey (or maple syrup) until light and fluffy.
- Beat in the egg and vanilla extract until smooth and well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough is formed. If desired, add chocolate chips or chopped nuts.
- Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking tray, spacing them about 2 inches apart.
- For cookies: Flatten each dough ball slightly with the back of a spoon or your fingers. For bars: Press the dough evenly into the prepared baking tray to create a smooth and compact layer.
- Bake in the preheated oven for 10-12 minutes for cookies or 15-18 minutes for bars, or until the edges are lightly golden brown.
- Remove from the oven and allow the cookies or bars to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, enjoy your homemade oat bran cookies and bars as a nutritious snack or dessert! Store any leftovers in an airtight container for up to one wee
